Matcha Sable Cookies

Sables are a staple for cookie fanatics.  While traditional Japanese cuisine does not tend to incorporate fat in their dishes, this avant garde cookie marries the best of French and Japanese produce in one bite.  The buttery aroma complements well with the strong fragrance of Copper Tea's Cafe Standard matcha in a way that is so enticing, it was even complimented by one of the former Consuls General who came here from Japan.

Steps

  1. In a standmixer fitted with a paddle attachment, mix cold butter, icing sugar, and salt until fine crumb forms. 
  2. Add the yolk and mix until it appears cohesive.
  3. Sift flour and matcha together, add to butter mixture and paddle until a dough forms.
  4. Refrigerate wrapped for a few hours.
  5. Roll dough out to 5mm and cut using a cookie cutter that brings you joy.
  6. Bake at 375F for 10 minutes, and then let cool on a rack.

 

Store these matcha sables airtight and light tight, so the butter does not oxidize so fast, and the matcha stays vibrant.
